Laurie's Cooking Tip:
"Low and Slow is the Way to Go!"

Buffalo meat is lower in fat than beef; therefore, it cooks faster than beef and can become dry if over cooked. That's why it's important to always remember "Low and slow is the way to go!" As a general rule, buffalo should be cooked about 50 degrees lower than beef, but for the same amount of time. Also, buffalo meat is best when cooked from rare to medium. Never cook directly in a flame. The Buffalo Guys Buffalo Meat can be substituted in ANY recipe that calls for beef. You'll love cooking with our buffalo meat and you'll love the taste!

London Broil - Culotte Steak

Prepare the following super easy marinade:

  • 1/3 c. canola oil (or other of your choice)
  • 1/3 c. red wine vinegar
  • 1/3 c. soy sauce
  • 1 t. garlic sauce
  • 1 T. minced dried onion
  • Add your favorite seasoning to taste.

Place all the ingredients in a 1 gallon plastic bag. Add the Culottes and place in refrigerator, laying flat, for at least 4 hrs. or, better yet, overnight.

Remove from marinade and sear both sides in a preheated oven or on a very hot grill. Turn the heat down and cook “Low and Slow” until rare or medium rare. Use tongs, never a fork, to turn.

Let stand 10-15 minutes before cutting. IMPORTANT: Cut steaks across the grain at an angle. Slice thinly. When prepared properly these are juicy, tender and very, very tasty!

Mustard Short Ribs

  • 4 lbs. ribs
  • 1/3 c. prepared mustard (I just use regular yellow mustard)
  • 1 T. sugar
  • 2 T. lemon juice
  • t. salt
  • 1/2 t. pepper
  • 2 cloves of crushed garlic
  • 4 medium onions, sliced


Place buffalo ribs in shallow baking dish. Mix mustard, sugar, lemon juice, salt, pepper, and garlic; pour over the ribs. Top with onions. Cover and refrigerate, turning ribs occasionally, for 4 to 24 hours.

Place ribs with marinade and onions in Dutch oven or any other oven proof baking dish, and cook at 350 degrees for about 2 hours. Check for tenderness. Cook longer, if necessary, for 10-minute intervals until the ribs are tender.

*Another way I have used this same recipe is to just put it all in a crock pot and cook for 8-10 hours on low.

*Instead of the mustard marinade, use your favorite BBQ sauce and spice it up with onions and garlic. There are many different marinades on the market right now that are really good. Have fun experimenting! Enjoy!

Homemade Prairie Burgers
*The best tasting burgers you will ever cook!

  • 1 lb. The Buffalo Guys Ground Buffalo
  • 1 Tbsp. Italian Bread Crumbs or crushed Saltine Crackers
  • 1 Tbsp. chopped onion
  • 1 egg
  • salt & pepper to taste

Mix the above ingredients well. Shape into patties (makes about 3 burgers). Place on a hot grill, close the lid and turn down to medium. Cook approximately 5 minutes on each side, until internal temperature reaches 160 degrees F.

The Buffalo Guys Pot Roast

  • 3-4 lb. Buffalo Prairie Pot Roast
  • 3 Beef Bouillon Cubes
  • Lawry's Season Salt

In the morning, place the Buffalo Roast in a slow cooker, generously seasoning with Lawry's Season Salt. Add 1 c. water and the bouillon cubes. Cook on low all day. Your roast will be done to perfection in 6-8 hours. (Serves 4-6)

Hot Prairie Sandwiches

Follow the pot roast recipe. Take the cooked meat and chop into bite size pieces. Make gravy using the juices in the slow cooker by adding a flour/milk mixture and stir to desired consistency. Add the chopped meat and serve over bread or buns. (Serves 6-8)

Also great served over mashed potatoes or rice!

Hot BBQ Prairie Sandwiches

Follow the pot roast recipe. Take the cooked meat and chop into bite size pieces. Just add your favorite barbecue sauce to the chopped meat, heat through and serve over toasted buns.
(Serves 6-8)

The Buffalo Guys Pot Roast (alternate recipe)

  • 3 lb. The Buffalo Guys Pot Roast
  • 1/3 c. Beef Base Concentrate
  • 4 Tbsp. Chopped Garlic
  • 1 Tbsp. Thyme
  • Coarsely Ground Black Pepper

Mix the beef base concentrate and the chopped garlic; gently rub this mixture into the roast. Sprinkle the thyme and the coarsely ground black pepper over the roast, then gently rub this mixture into the roast. Let stand at room temperature for 1 hour.
Preheat oven to 500 degrees. Place roast in a foil lined roasting pan, keep uncovered and bake in oven for 20 minutes. (This seals in the flavor!) Then lower oven temperature to 275 degrees. Roast uncovered for 22-25 minutes per pound of roast for medium rare to medium. Remove roast from oven, let set for 5-10 minutes prior to slicing and serving. (Serves 5-6)

Buffalo Meat Loaf

  • 2 eggs beaten
  • ½ c. milk
  • ½ c. crushed saltine crackers or Italian bread crumbs
  • ¼ c. dried onion
  • 2 Tbsp. Parsley
  • 1 t. salt½ t. sage
  • 1 ½ lb. The Buffalo Guys Ground Buffalo

Mix above ingredients well. Pat into a greased loaf pan. Bake for 1¼ hrs. at 325 degrees.
Combine:

  • ¼ c. ketchup2
  • T. brown sugar
  • 1 t. dried mustard

Spread over meat loaf and bake another 10 minutes until internal temperature reaches 160 degrees F. (Serves 6-8)

The Buffalo Guys Buffalo Burgers
(Pre-made patties)
*The most convenient burgers you will ever cook!

Leave buffalo burgers frozen until ready to grill.

Heat grill on high until it is hot. Separate burgers with a dull butter knife and season with your favorite spices. Place frozen patties on hot grill, close the lid and turn heat down to medium. Turn when the juices are on the top surface of the burgers, about 5 minutes. Cook the other side another 5 minutes until the internal temperature reaches 160 degrees F.

The Buffalo Guys Buffalo Steaks

*For a "melt-in-your-mouth" steak,
follow these instructions.*

Thaw your favorite The Buffalo Guys Buffalo Steak in the package overnight in the refrigerator or if you’re in a hurry, place it in a dish of luke warm water while still in the sealed package.

Heat the grill on high until hot. Place your thawed, seasoned steaks on the grill and sear one side. Turn steaks over and sear the other side. Now, turn the grill down to medium, close the lid and be patient.

Buffalo Steaks are best when cooked rare, medium rare or medium. It is best to use tongs when turning steaks so the juices can remain locked within the steak. It may be necessary to turn the steaks once more.

Cook steaks away from an open flame and always remember "low and slow".

The Buffalo Guys Buffalo Steaks are absolutely the best steaks you will ever eat when cooked using these instructions!

The Buffalo Guys Loin Barbecue

The following directions are for any of our whole loin products, including:

Whole Tenderloin
Whole Strip Loin
Whole Ribeye Loin
Party Rib Roast
Wyoming Party Roast

Thaw the loin in the refrigerator while still in the package. This may take a couple of days. If you don’t have that kind of time you can place it, while still in the package, in a sink or large bowl of luke warm water until thawed.

For Grilling: Pre heat grill and keep on high. Generously, season the loin with your favorite spice concoction (mine is plain old Lawry’s). Place it on the hot grill and sear all sides while gently turning it with tongs. Turn the heat down to medium and be patient. While enjoying good conversation and refreshments occasionally turn the loin so it will cook evenly. Cook until internal temperature is 120-130 degrees, about 1-1.5 hours. Remove from the heat; let stand for 10-15 minutes, slice and serve.

For Oven Cooking: Preheat oven to 450 degrees. Roast for 20 min. Lower temp to 325 degrees. Follow above instructions for internal temp. and cooking time.

Alternate Oven Cooking Method (very good!):

Marinate whole tenderloin for approximately 4-6 hours in a sealed plastic bag with:

1/3 c. soy sauce
1/3 c. oil
1/3 c. red wine vinegar
1/2 chopped onion
2 T. chopped garlic

Heat oven to 500 degrees.  Place whole tenderloin on a foil-lined baking pan.  Rub a mixture of 1 T. Kosher salt and 1 T. coarse black pepper into the loin.  Place uncovered loin in the pre-heated oven.  Bake for 22 minutes.  Then turn to broil for an additional 3 minutes.  Remove from oven and wrap up tightly in the foil.  Let tenderloin stand for 40 minutes.  Be patient - the tenderloin will be prepared to serve medium rare if you follow these instructions. By using this method you will have much less shrinkage and a wonderful flavor that is very popular.

Ken’s Buffalo Mountain Man Eggs

For a great tasting breakfast!

  • 1 package of The Buffalo Guys Mild Jerky
  • 1 Dozen Eggs (Farm Fresh if possible)
  • 1 Red Onion, finely chopped
  • 2 Cloves of Garlic, finely chopped
  • ¼ Cup Olive Oil
  • ½ Cup Grated Cheese (Cheddar or Swiss work great)
  • Salt and Pepper to taste

Cut the jerky into pieces less than ½” long. Sauté jerky in the oil until very hot. Add the chopped onion and garlic. Sauté until the veggies just begin to brown. Add the eggs and stir well. Turn down heat and cook just as you would scrambled eggs. When the eggs are cooked to your liking, top with the grated cheese and cover. Let stand until the cheese is melted. Serves two hungry buffalo hunters or six regular folk. Try hot peppers or picante as a topping too.
